Shalleck, author of the best-selling culinary memoir Mediterranean Summer, discovered the region's local gems when he became the private chef for an Italian billionaire couple aboard their jaw-dropping yacht. He shopped the open-air markets, sought out the best food and wine, and created world-class cuisine in the confines of a small galley for his demanding employers and their glittering array of guests.
"The markets in these towns are so seductive to me as a cook," he said. "You can quickly see how the market will tell you what you should be making. I often waited until I got to the market to plan a menu. The basics in cooking help, but if you honor the dynamics of simple food, Mother Nature has already done half of it for you. I'm more of a messenger than a cook."

When he's not sailing the Mediterranean and sharing its hidden gems, Shalleck is a chef and culinary television producer. He has cooked in noted restaurants and for special events in New York, San Francisco, Napa Valley, London, Provence and throughout Italy. His credits as television culinary producer include the PBS series José: Made in Spain, with José Andrés, and Fast Food My Way with Jacques Pepin.
